Slow Cooker Pesto Chicken

I always make this recipe with the hopes of having easy chicken on hand but it flies every time I make it. One of my kids loves making sandwiches with it and she just adds some shredded mozzarella and tomato on top. 

Ingredients

1 tablespoon olive oil
1 pound chicken breast
1 cup pesto sauce (I like buying the Costco brand, use one cup and freeze the rest for future use)

 

Instructions

  1. Add the olive oil to the bottom of the slow cooker.
  2. Place the chicken in the slow cooker and pour the pesto sauce on top.
  3. Cook on high for 2 hours or low for 5–6 hours, until the chicken is tender and easy to shred.
  4. Shred the chicken and discard most of the sauce. The sauce may separate during cooking, so I usually remove some of the excess oil.
  5. Return the shredded chicken to the slow cooker and coat with a small amount of the remaining sauce.
  6. Serve with pasta, in paninis, or on top of salads.
