Slow Cooker Chicken and Bok Choy

This is such an easy recipe, and if you add a few more vegetables (broccoli, peppers, etc.), it makes a complete meal.
Ingredients
- 2 medium onions, chopped
- 4 garlic cloves, minced
- 1/3 cup apple cider vinegar
- 1/3 cup soy sauce
- 1 tablespoon brown sugar
- 1 bay leaf
- 1/2 teaspoon pepper
- 1 3/4 lbs chicken tenders
- 1 teaspoon paprika
- 2 heads bok choy, sliced
Instructions
- Place onions, garlic, apple cider vinegar, soy sauce, brown sugar, bay leaf, and pepper in the slow cooker. Stir to combine.
- Add chicken on top and sprinkle with paprika.
- Cover and cook on low for 7–8 hours or on high for 3–4 hours.
- About 10 minutes before serving, add bok choy and cook until softened.
- Remove bay leaf before serving. Serve over rice.
