Slow Cooker BBQ Chicken

This recipe is one of my go-tos for keeping an easy protein option on hand. The whole family loves it, and it’s such a simple way to add protein to all kinds of meals.
Ingredients
- 1 tablespoon olive oil
- 1 bottle BBQ sauce (I like Primal Kitchen)
- 2 lbs chicken breasts
- 1 tablespoon cornstarch
Instructions
- Add olive oil to the slow cooker.
- Place chicken breasts in the slow cooker and cover with BBQ sauce.
- Cook on high for 2–3 hours or on low for 5–6 hours, until the chicken is tender and easy to shred.
- Remove the chicken from the slow cooker and shred using two forks.
- In a small bowl, whisk the cornstarch with 1–2 tablespoons cold water to create a slurry. Stir the slurry into the BBQ sauce in the slow cooker and cook for a few minutes, until the sauce thickens slightly.
- Return the shredded chicken to the slow cooker and stir to coat with sauce.
- Serve with rice and steamed vegetables, or use in sandwiches, tacos, or quesadillas.
